Adobo is one of the most popular Filipino dishes. Here's a traditional recipe for adobo:
Ingredients:
- 2 lbs. of chicken or pork (you can use a combination of both)
- 1/2 cup vinegar
- 1/2 cup soy sauce
- 5 cloves of garlic, minced
- 1 onion, sliced
- 1 teaspoon whole black peppercorns
- 2-3 bay leaves
- 1 cup water
- Cooking oil
- Salt and pepper to taste
Instructions:
1. In a large bowl, combine the vinegar, soy sauce, garlic, and black pepper. Add the chicken or pork and let it marinate for at least 1 hour, or overnight for better flavor.
2. Heat some oil in a large skillet or pot over medium-high heat. Remove the chicken or pork from the marinade and reserve the marinade.
3. Brown the chicken or pork in the hot oil, turning to cook all sides evenly. Do this in batches if needed. Once browned, set aside.
4. In the same skillet or pot, sauté the onions until translucent. Add the marinated meat back into the pot and pour in the reserved marinade, along with the bay leaves.
5. Add water and bring the mixture to a boil. Reduce the heat and let it simmer for about 40-45 minutes, or until the meat is tender, and the sauce has thickened.
6. Season with salt and pepper to taste. You can adjust the seasoning by adding more vinegar or soy sauce if desired.
7. Serve hot with steamed rice. Adobo tastes even better the next day as the flavors develop further.
Note: This recipe can be customized according to personal preference. Some variations of adobo include adding potatoes, coconut milk, or even substituting the meat with other ingredients like tofu or vegetables.
