Sinigang is a popular Filipino sour soup dish that is typically made with pork, beef, or shrimp as the main ingredient. The soup gets its characteristic tanginess from tamarind fruit or other souring agents like kamias (bilimbi) or guava. Here is a basic recipe for Sinigang:
Ingredients:
- 500g pork ribs or beef (or any preferred meat)
- 1 medium-sized onion, quartered
- 2 tomatoes, quartered
- 2 green chili peppers (siling haba)
- 1 radish, sliced
- 1 eggplant, sliced
- 1 bunch kangkong (water spinach)
- 1 pack sinigang mix (tamarind soup base)
- Fish sauce (patis) or salt, to taste
- Water
Instructions:
1. In a pot, add water and bring it to a boil.
2. Once the water is boiling, add the pork ribs or beef. Let it simmer until the meat is tender and cooked thoroughly.
3. Skim off any impurities that float on the surface of the water.
4. Add the onions, tomatoes, and green chili peppers. Let it simmer for a few minutes until the vegetables are slightly tender.
5. Dissolve the sinigang mix in a small amount of water and pour it into the pot. Stir well.
6. Add the radish and eggplant. Let it simmer until both are cooked.
7. Season with fish sauce (patis) or salt according to your taste preference. You can adjust the amount of sourness by adding more sinigang mix or tamarind if desired.
8. Finally, add the kangkong (water spinach) and cook for a few more minutes until the leaves wilt.
9. Serve the sinigang hot with steamed rice.
Note: You can also add other vegetables like okra, string beans, or taro (gabi) if desired. The choice of meat and vegetables can vary according to personal preference.
